What Are You Making For Dinner Tonight?
June 3, 2010It is the million dollar question each day! Well, let me share with you what I made last night……I had lentils (Puy) in my pantry and I boiled them with some carrots and celery for a bit, then I turned them off and went to pick up kids etc. I picked up some nice salmon from my favourite fish guy while I was out. So once home, I put some homemade parsley pesto (parsley from my garden, recipe to follow) onto the salmon and grilled it on the BBQ. I reheated the lentils until they were cooked properly, then served them up and placed a piece of salmon on top. I made a green salad with lots of vegetables to go on the side. Mmm good!! Easy Weeknight Chili
September 8, 2009No one will guess this is a vegetarian dish!!
2tbsp +2 tsp extra virgin olive oil
1 oinon diced
1 carrot diced
1 red pepper diced
3 cloves garlic minced
1- 19 0z (540ml) can black beans – drained and rinsed
1-19 oz (540ml) can kidney beans – drained and rinsed
1-28 oz (796ml) can plum tomatoes
2 tbsp tomatoe paste
1/4 cup medium salsa
2 tbsp + 1 tsp chili powder
1 tsp cumin
1 tsp oregano
1 tsp basil
1 – 12oz (340g) package Yves Veggie Ground Round ( can also use mexican spiced one) (more…)
