Beet, Avocado, and Grapefruit Salad

4 medium-sized roasted beets
2 tsp grainy mustard
2 tsp liquid honey
2 Tbsp sherry vinegar or red wine vinegar
1 Tbsp raspberry vinegar
1/3 cup extra-virgin olive oil
sea salt and black pepper
1 romaine heart, torn into bite-sized pieces
4 cups baby spinach
1 large pink grapefruit, peeled and cut into sections
1 large firm but ripe avocado, pitted, peeled and sliced
1/2 small sweet onion, thinly sliced
1/2 cup toasted pecans, coarsely chopped

Cut roated beets in half and slice. Place them in large bowl and set aside.

For the vinaigrette: combine mustard,honey,vinegars in small bowl. Gradually whisk in olive oil until well combined.  Season with salt and pepper.

Just before serving combine romaine, spinach, grapefruit, avocado and onion in a large salad bowl.  Toss with vinaigrette. Add beets and pecans and gently toss.  Makes 4-6 servings.

Try and add more red and pink produce to your diet.  These foods are full of lycopene which is an antioxidant that may help lower your risk of heart disease.  Eat up your tomatoes, watermelon, guava and pink grapefruit! mmm!

BACK TO SCHOOL

Well it’s that chaotic time of year again, getting everyone back to school.  New routines to work out, schedules to follow and lunches to make!  It can all be a bit overwhelming after the lazy days of summer.   It really is an opportunity to start fresh.  Look at this time as the “New Year”.  It is a time to set fitness goals, health goals and life goals.  Don’t just sign your children up for all of their activities, sign yourself up!!  Get outside and enjoy the fall days.  Buy local produce which is still abundant.  Get organized and freeze berries and fresh produce that you will love having in the winter months.   Tomatoes are great right now, so make tomato sauce and freeze it for easy weeknight dinners later.   Use the energy that is out there to make changes for yourself.

It may not always be possible to buy organic produce but here are 12 foods that have been identified with the highest pesticide residues.  We recommend always buying these foods organic:

1. Celery
2. Peaches
3. Strawberries
4. Apples
5. Blueberries
6. Nectarines
7. Bell Peppers
8. Spinach
9. Kale
10. Cherries
11. Potatoes
12. Grapes (imported)

And remember to choose local produce over imported all the time!!
