Lentils

Lentils are the world’s oldest cultivated legume. They come in many varieties and colours. In general, the brown and green varieties retain their shape well, whereas the hulled and split red and yellow lentils disintegrate and therefore are best for soups or purees.  Lentils are one of the easiest beans to digest and no pre-soaking is required.  In general, use 2 1/2 cups of water to 1 cup of lentils. Boil and simmer for 40 to 45 mins.  Pressure – cooking isn’t recommended.  Add garlic, onion, vegetables and seasonings for a great nutritious meal.

WHEN TO EAT AND WHEN NOT TO EAT – THAT IS THE QUESTION?

In addition to what you eat, WHEN you eat is critical.  Have breakfast before 10 a.m. and eat lunch around 11 a.m. to keep blood sugar steady.  A snack around 2 p.m. will help you through the typical slump in cortisol levels, which starts around 3 p.m.  Finally, have dinner no later than 6 p.m. and a few bites of  a healthy snack around bedtime.  It is recommended to make your dinner your lightest meal to avoid stimulating cortisol output when it should be tapering off in time for bed.

Fruits and Vegetables

The grocery stores are starting to look a little more interesting – with more variety of fruits and vegetables coming in.  How much do we need and how to chose?iStock_000007631532Small

At the least, aim for 7 to 9 servings of fruits and vegetables per day(5 for small children). Given that a serving is relatively small, these minimum amounts are easy to achieve.

One Serving of Fruit

1 medium-size piece of whole fruit
1/2 cup freshly chopped, cooked or canned fruit (canned in own juices) including applesauce and fruit cooked in baked goods
3/4 cup (6fl. oz)of 100% fruit juice with no added sugar
1/4 cup dried fruit

One Serving of Vegetables

1 cup of raw leafy vegetables
1/2 cup chopped raw, cooked, or canned vegetables
1/2 cup of cooked, canned, or frozen legumes (beans or peas)
3/4 cup (6 fl oz) of 100% vegetable juice

Empower your kids  – make the time to feed them wholesome nutritious food.  You are not doing your kids any favours by giving them processed, microwaveable fast foods.  Take an honest look at your fridge and cupboard to see where you can make nutritional adjustments. Stock up the pantry with fresh fruits, vegetables, healthy grains, legumes, nuts and seeds. Approach food changes in a positive manner. Kids will pick up on your attitude and mimic it. Healthy food can be delicious and fun!! Make dietary changes a family affair. Remove food bribes from your discipline tactics. Start using other non-food options such as special time with mom, a movie night etc.  Get your children involved in cooking, vegetable gardening and even shopping.  They will feel better if they are fueled well!!

RESPONSE TO ARTICLE IN GLOBE AND MAIL RE MARGARINE VS BUTTER

It is clearly evident that butter is still better….than margarine.   Even if most brands state that they are relatively low in saturated fats, the tolerable upper intake level should be at zero.  This is based on the undeniable relationship between trans-fatty acid intake and increased risk of coronary heart disease.  In other words, avoiding hydrogenated fat is best for optimal health.
